Gluten Free Gingerbread Cookies

Ingredients:

  • 2 eggs
  • 2 tablespoons coconut oil
  • 1/4 cup molasses
  • 1 tablespoon vanilla extract
  • Heaping 1/3 cup of Sunbutter
  • 1 teaspoon baking soda
  • 2/3 cup Arrowhead Mills coconut flour
  • 2 tablespoons Simple Truth coconut sugar
  • 1/4 teaspoon pink salt
  • 1 teaspoon cinnamon
  • 1/4 teaspoon all spice
  • 1 teaspoon ginger

Directions:

  • Add wet ingredients to dry ingredients
  • Mix everything together
  • Form one big dough ball and place in the freezer for five minutes
  • Preheat your oven to 350
  • Line a baking tray with parchment paper
  • Pour some coconut flour onto a plate
  • Take a tablespoon of dough, roll it into a ball, then roll it into the sugar
  • Place on the baking tray
  • Continue this process until you no longer have dough
  • When all of your cookies are rolled, take two fingers and lightly press down on each ball
  • Bake for 8-9 minutes
  • ** Do not over bake!
