Chocolate Covered Strawberry Crepe

Ingredients:

  • 2 cinnamon coconut wraps (I used NUCO)
  • 2 pieces of dark chocolate (I used eating evolved midnight coconut)
  • About 20 strawberries
  • 2 large spoonfuls of coconut butter
  • 2 Emmy’s dark cacao coconut cookies (optional)

Directions:

  • Melt coconut butter on the stove (if not already melted) LOW TEMP, coconut butter burns!
  • Melt chocolate on the stove (low temp)
  • Take one wrap and spread your melted coconut butter all over one side, sprinkle 1 dark cacao cookie over top and fold your wrap diagonally (coconut butter on the inside)
  • Cut all of your strawberries in half, and place some on the inside of one half of your crepe
  • Diagonally fold the other half on top of your strawberry filled side (making a triangle with your wrap)
  • Place some more strawberries on the inside of that half. Continue this process for the next crepe
  • Once both are done, drizzle chocolate and your left over coconut butter over top
