Chocolate Chip Persimmon Fluffy Pancakes (GF)

Ingredients:

  • 1 cup Bobs Red Mills all purpose gf flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/4 teaspoon pink salt
  • 1 persimmon
  • 2 eggs
  • 1/4 cup coconut milk
  • 1/2 teaspoon cinnamon
  • Pascha 100% cacao chocolate chips

Optional

Directions:

  • Chop your persimmon up and place into a food processor, pulse until pureed
  • Mix dry ingredients with wet
  • Pour about 1/4th cup of batter (pancake size) onto a hot greased fry pan
  • Sprinkle a 3-4 chocolate chips into each pancake
  • Wait until your pancakes start to bubble and carefully flip
  • ***This batter makes around 7 pancakes
