Chicken Liver and Pork Meatballs


  • 1 cup chicken liver, chopped
  • 1 1/3 lb ground pork (I bought a .66lb and .68lb, this number does not need to be exact)
  • 1/2 sweet onion, chopped
  • 2 eggs
  • 4 garlic cloves, chopped finely (try and do this first)
  • 1/2 cup crackers, ground (placed in the blender and pulsed until finely chopped then measured)
  • 1/2 teaspoon sea salt
  • Cracked pepper
  • 1/2 teaspoon paprika
  • 1 teaspoon italian seasoning
  • 1/2 teaspoon cumin
  • 1/4 teaspoon chili powder


  • Preheat oven at 425
  • Place your chopped chicken liver and pork into a food processor, pulse until everything is finely chopped and combined well
  • Place your meat into a bowl and add the rest of the ingredients
  • Form a tablespoon size ball with your hand and place on a foiled baking tray
  • Bake meatballs for 17 minutes, add to a sub or pasta
